This flagship white is named “Fossils of the Sea”—a tribute to the ancient marine bed where these vines grow. Sourced from a cold, southeast-facing plot of calcareous soil just 2km from the Atlantic, this 100% Chardonnay is a true expression of Uruguay’s unique maritime terroir.
Hand-harvested and fermented with native yeasts, the wine rests on its fine lees for 6 months in French oak barrels. The result is a deep, saline-driven Chardonnay with vibrant tension, offering layers of ripe tropical fruit, lemon curd, and a distinct chalky minerality. With only 1,161 bottles produced, this is a rare and profound wine that balances Old-World freshness with a distinct Uruguayan sense of place.
