L'ENTREMETTEUSE La Cuica Pet Nat 2023
From two vineyards in Colchagua, Chile. The Pinot Noir is 11 years old, planted on a gentle slope with drip irrigation 9km from the sea, on granitic sand with clay and quartz gravel. The Chardonnay vineyard has fertile loam-clay soil. Limited production of 1,200 bottles.

Tasting notes
Fresh and lively palate full of orchard fruits, quince, sour notes of sea buckthorn and Persian lime, plus sharp red fruits and red apple that linger through the finish.
Vinification
Grapes are hand-destemmed or selected as whole bunches, cold macerated in isothermic bins for at least 2-3 days with a light fermentation beginning. After a gentle pressing without added sulphur, the juice is selected by astringency, cold-settled and naturally fermented in Flextank eggs at low temperature. When the desired residual sugar level is reached, the wine is chilled, racked and bottled. Fermentation then resumes in bottle and finishes slowly over several months. Aged 18 months sur lie.
