L'ENTREMETTEUSE Las Socias Pet Nat 2023

L'Entremetteuse Las Socias is a unique white sparkling wine from Colchagua, Chile, made with Marsanne and Roussanne grapes using the ancestral method. The result is a lively wine with aromas of apricot, honey and spice — joyful, festive and perfect for sharing. Aged one year on lees and disgorged May 2024.

Tasting notes

A harmonious blend of Marsanne and Roussanne with a luminous straw-yellow hue. An intricate bouquet of ripe apricot and white peach intertwined with floral notes of hawthorn and acacia. Subtle layers of honey, quince and roasted apple, enriched by exotic touches of lychee and warm spices. Both powerful and refined on the palate, with fresh acidity and a long, complex, aromatic finish.

Vinification

Grapes are hand-destemmed or whole-bunch vinified, followed by cold maceration in isothermic tanks for at least 2-3 days. After a gentle pressing without added sulphur, must is cold-settled and spontaneously fermented at low temperature in Flextank egg fermenters. Once the desired residual sugar level is reached, the wine is chilled, racked and bottled. Fermentation resumes in bottle over several months, completing gradually as ambient temperatures rise.
