L'ENTREMETTEUSE L'Epine de la Rose Pet Nat Torontel 2022

A unique sparkling wine from L'Entremetteuse in Colchagua, Chile. Made from 100% Torontel grapes from a 100-year-old, dry-farmed vineyard on granitic sand with an ocher clay subsoil. The natural fermentation process creates fine bubbles with aromas of lychee and roses, offering a lively and fresh palate.

Vinification

Grapes are hand-destemmed or selected as whole bunches, cold macerated in isothermic containers for at least 5 days. After a gentle pressing without added sulphur, juice is selected by astringency, cold-settled and naturally fermented in Flextank eggs at low temperature. When the desired residual sugar level is reached, the wine is chilled, racked and bottled. Fermentation resumes in bottle and finishes slowly over several months as temperatures rise.
