From a 20-year-old vineyard in Apalta, planted on a flat plot with drip irrigation. Super-delicate, fine bubbles with a touch of residual sugar — remarkably complex for a pét-nat and disarmingly drinkable. Awarded 16.5 points by Jancis Robinson.

Tasting notes

Red mulberries, red cherries and quince, a hint of bresaola, the bitter bite of hawthorn berries, a touch of raspberry jam, and a medicinal correction of juniper.

Vinification

After a gentle pressing without added sulphur, the juice is selected by colour, cold-settled and naturally fermented in eggs at low temperature. When the desired residual sugar level is reached, the wine is chilled and bottled during fermentation. Fermentation then resumes in bottle, finishing slowly over several months as temperatures rise.
