Tasting notes
Dense and meaty aromas of blackcurrant with layers of dark chocolate and mint. The powerful, structured palate is full of spiced black fruits with touches of charcuterie, green pepper and dark chocolate on the long finish. Defined tannins.
Vinification
Hand-harvested in small crates and manually sorted at the Puquillay winery. Cold maceration without added sulphites using dry ice, then fermentation in temperature-controlled tanks (50% whole bunches, 50% destemmed) at avg 27°C with gentle pigeage. Maceration lasted ~10 days with 100% MLF on lees. Aged for one year in TAVA amphoras. No filtration or sulphite addition before bottling.
